When we were on chat yesterday, I asked you if you wanted this recipe and you said yes. So here it is-Garlic Mashed Potatoes
2 Heads Garlic
4 T Butter
2 T Flour
1 cup boiling milk
1/4 t salt
pinch of pepper
2 1/2 # potatoes
4 T Butter
salt & white pepper
3 to 4 T Whipping Cream
4 T minced parsley
Separate garlic cloves. Drop into boiling water and boil 2 minutes. Drain and peel. Cook garlic slowly with 4 T butter in a covered saucepan for 20 minutes or until tender but not browned. Blend in 2 T flour and stir over low heat until it froths, for two minutes. Do not brown. Beat boiling milk and spices into sauce and strain or puree in blender. Put sauce over heat and add additional 4 t of butter. Beat into mashed potatoes along with whipping cream and parsley.
