I think I am throwing together some pork tenderloin for supper. I'll remove the silver skin, marinate in raspberry/chipotle marinade and grill or broil it. Along with it will be a nice tossed salad which will include some broccoli and avocado. To finish the meal out, we will have either 5 cheese or butternut squash ravioli.

I have found if you freeze your food in tin foil and storage in a brown bag (shopping) it can last a long time without freezer burns.

Phil, I was curious about your question, so I looked around and found a page at the LIVESTRONG site which can provide some answers for those of us who have reduced kidney function.  This should point you in the right direction.

This is not a recipe. However, for those of us who watch what we eat and do exercise and/or physical activity a good part of our normal day, there are some bars that my wife and I recently discovered, which have some rather unique compositions. She got the first two from Oxygen magazine. I found them laying on the counter, and as usual, if I find something in the kitchen and it is ready to eat, so am I. (LOL!!) In any case the bars have right at or a little over 20 grams of carbohydrate. Nothing out of the ordinary, except that all but 4-6 of these grams is fiber! These are Quest bars and you can order them over the internet. Right now, we have the Peanut Butter Supreme and Almond/Vanilla bars. They taste good. As with any protein bars, I wouldn't write the newspapers about them, but I do like their composition because they would not spike your blood sugar.
